Today's Kitchen- How To Make Egusi Soup ( Melon Soup)

As you all should know, I'm not really a fan of draw soups like okra, ewedu, ogbono and the rest, so you'll find me mostly preparing either preparing egusi soup, groundnut soup or vegetable soup, these are my favorites. So if you're a lover of Egusi soup (melon) and you don't know how to prepare it yourself or if you prepare it and you want to learn from my own cooking techniques, all you have to do is read the remaining post below. But before I start let me tell you a little about melon soup. It is a soup generally eaten by Nigerians, it is one of the common soup you can get in a restaurant when eating outside. It is usually eaten with swallowed food like pounded yam, Eba, amala, Demo, tuwo-rice among others. So let's begin Today's cooking lesson...

 Ingredients
 Grinded Melon seed
 Vegetable (spinach or Pumpkin leaves(ugu))
 Palm oil
 Chicken, beef or goat meat
 Blended tomatoes, pepper and onions
 Cow skin(pomo)
 Stock fish
 Salt and seasoning to taste
 Crayfish (optional)
 Curry


 Directions
 1. Get a clean pot, put your washed meat, stockfish and animal skin in it
 2. Add water, onions, salt and seasoning to taste
 3. Put on fire and allow to boil for 30-45minutes
 4. Turn the boiled meat into a clean bowl, rinse the pot and set it back on the fire
 5. Add your palm oil into the pot and heat then pour the fresh blended tomatoes, pepper and onions to the oil and fry for some few minutes
 6. Mix your melon with little water to form a paste and add to the fry tomatoes on fire, stir and fry together. Check and stir constantly to avoid it getting burnt
 7. Wash the vegetable and set aside
 8. Add the boiled meat and the stock in to the melon and add more water if its too thick, stir and taste to know the quantity of salt to add if required
 9. Add the curry and crayfish and stir
 10. Cover and allow to boil for 10-15 minutes then add the vegetable and steam for another 5minute

And that's it, you're good to go. Enjoy with pounded yam or your preferred swallow and be careful not to bite your fingers.
