Benefits Of The Moringa Tree

Moringa oleifera is a tree that is mostly found in Asia and Africa. It is grown in semi arid, tropical and sub tropical climate. It has high nutritional value and medicinal benefits as it contains good source of protein, vitamins, amino acid, beta carotene and various phenolics.

Every part of the moringa tree is considered useful, the leaves, the root, the seeds, the flower, the bark and also the roots and that is why it is known as the most useful and most valuable plant.

Today's Kitchen; How to make Nigerian Masa

The Nigerian masa, otherwise known as rice cake is a popular delicacy you find mostly in the northern part of Nigeria. It is referred to as a snack that is mostly taken as breakfast and eaten with Suya (roasted meat) at night. It can also be served and eaten plain or with vegetable soup. I made some weeks back at home and it was fantastic and I enjoyed it with my favorite spinach leave soup. So today I'll be sharing the recipe on how to make your own masa especially for those who are far from the north.




Ingredients
 3cups of raw rice
 Yeast
 Water
 Vegetable oil
 Baking powder
 Sugar or salt to taste
 Pan to fry

Directions
 1. Soak two cups of the raw rice to rise for 8-10hours
 2. Boil the remaining 1cup of rice and set aside
 3. Drain the soaked rice and mix together with the boiled rice
 4. Blend the rice together to form a thick paste (you'll need a good blender to grind smooth)
 5. Dissolve your yeast in warm water and add to the rise paste
 6. Stir and cover in an air tight container to ferment overnight
 7. After fermentation has occurred add little quantity of sugar and salt to taste and add 2teaspoons of baking powder to make it fluffy
 8. Set pan on fire and add a table spoon of vegetable oil and fry in bits(there's a special pan used in frying the masa as seen below but you can make use of a non-sticky frying pan)


 9. Fry the masa, side to side until its brown, take off the fire and repeat for the remaining paste till you're all done


Now serve and enjoy your masa
